why do some Speedmaster 105.003 models say ‘Professional’ on the dial and some don’t?

In one place I read that some later examples came from the factory with ‘Professional’ on the dial, and in other places I read that any such dial on a 105.003 must be a service replacement (which presumably detracts from the value).
