What’s the goal if you have no known specs?

As I continue to service vintage watches, I am becoming more and more aware of the differences in build quality, as well as the extra features of a watch, that lead me to expect better performance.

Of course, though, "better" performance is subjective, and the standards of the original manufacter may be unknown or long forgotten. If you have a watch like this, how do you decide what level of performance is acceptable?
