Apple Watch ‘cellular’ – UK SIM options?

I’m looking at an Apple Watch Ultra 2, or perhaps 3 when it (hopefully) comes out in September this year.
I’m looking at my ‘cellular’ options for using it, mainly for emergencies, when I leave my phone at home when out cycling or running, and would appreciate your advice or experiences in what options are available to me, in the UK.

I’m currently with SKY Mobile, and I don’t think they support Apple at present. I think the only ones that do are EE, O2, and 3, but stand to be corrected.
So, would I need a separate SIM for my Apple Watch, to run independently from my iPhone, or does it still somehow need to be linked to your phone?
Of course ideally I’d like the same number but I’d have to cancel SKY and look at one of the others.
Would I need to have the same provider to make this work, i.e. EE etc. or can I have a different SIM in my phone to the one in my watch (I realise that the Apple are an e-SIM but you get my point).
It may be straight forward but doesn’t seem to be at present!
